STRAWBERRY CRUNCH CHEESECAKE BITES

INGREDIENTS:
Crust
Layer:
1 cup
graham cracker crumbs
4 tbsp
unsalted butter, melted
2 tbsp
sugar
Cheesecake
Filling:
8 oz (225
g) cream cheese, softened
1/4 cup
powdered sugar
1 tsp
vanilla extract
1/2 cup
heavy whipping cream, whipped
Strawberry
Center:
1/3 cup
strawberry jam or preserves
Crunch
Topping:
1/2 cup
crushed golden Oreos (or vanilla wafers)
2 tbsp
freeze-dried strawberries, crushed
1 tbsp
melted butter
INSTRUCTIONS:
Make
the Crust:
In a bowl,
mix graham cracker crumbs, melted butter, and sugar until combined.
Press about
1 tablespoon of mixture into each cavity of a silicone mold or mini muffin tin.
Freeze for
10 minutes to set.
Prepare
the Filling:
In a large
bowl, beat cream cheese until smooth.
Add
powdered sugar and vanilla extract, beating until creamy.
Gently fold
in whipped cream until fluffy and well combined.
Assemble
the Bites:
Pipe or
spoon cheesecake mixture into molds, filling halfway.
Add about 1
teaspoon of strawberry jam in the center.
Cover with
more cheesecake mixture to seal the jam inside.
Smooth the
tops and freeze for at least 1 hour
Make
the Strawberry Crunch Topping:
Combine
crushed cookies, freeze-dried strawberries, and melted butter in a small bowl.
Coat
the Cheesecake Bites:
Once firm,
remove bites from molds.
Roll the
bottoms in the cookie crumb mixture to coat evenly.
Sprinkle
extra strawberry crunch on top for color and texture.
Chill
and Serve:
Refrigerate
for at least 1 more hour before serving.
Store in an
airtight container for up to 4 days.
