Ingredients:
1 cup unsalted butter, softened
1½ cups granulated sugar
3 tbsp lemon zest
2 tbsp freshly squeezed lemon juice
1 large egg
3 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
¼ cup granulated sugar (for rolling)
Instructions:
Cream the Butter and Sugar:
In a large mixing bowl, use an electric mixer to beat the softened butter, 1½ cups of granulated sugar, and the lemon zest together. Mix for 1-2 minutes until the mixture is light and fluffy.
Add Wet Ingredients:
Add the lemon juice and egg to the butter mixture. Blend until the mixture is smooth and well combined.
Incorporate Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture. Use a spatula or your hands to gently mix until a soft dough forms.
Chill the Dough:
Cover the dough with plastic wrap and refrigerate for 30-60 minutes. This chilling time is important as it firms up the dough and prevents the cookies from spreading too much while baking.
Preheat the Oven:
While the dough is chilling, preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Shape and Coat the Dough:
Take the chilled dough and shape it into small balls, about 1 inch in diameter.
Pour the remaining ¼ cup of granulated sugar into a small bowl. Roll each dough ball in the sugar until it is fully coated.
Bake the Cookies:
Place the sugar-coated dough balls onto the prepared baking sheet, leaving about 2 inches of space between them.
Bake for 11-13 minutes, or until the edges are lightly golden and the centers are still soft.
Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes.
Transfer them to a wire rack to cool completely.
