Strawberry Shortcake Cheesecake Rolls


These Strawberry Shortcake Cheesecake Rolls are the ultimate dessert mashup! Soft, fluffy rolls filled with creamy cheesecake and topped with fresh strawberries – a deliciously indulgent treat!



Ingredients:

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup granulated sugar

1/4 cup unsalted butter, softened

1/2 cup buttermilk

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped

1/4 cup heavy cream







Instructions:

Preheat your oven to 375°F (190°C). Grease and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

Add the softened butter and mix until the texture becomes crumbly.

Pour in the buttermilk and stir until just combined, creating a soft dough.

Roll out the dough on a lightly floured surface into a rectangle (about 1/2 inch thick).

In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Spread the cheesecake mixture evenly over the rolled-out dough.

Sprinkle chopped strawberries on top of the cheesecake filling.

Carefully roll up the dough into a log, then slice it into 1-inch thick rolls.

Place the rolls on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.

While the rolls are baking, whip the heavy cream until soft peaks form.

Once the rolls are done, remove them from the oven and allow them to cool slightly.

Top with whipped cream and extra fresh strawberries before serving!
