MOUSSE CAKE

I. MOUSSE CAKE
: an incredible dessert ready in no-time!

Creamy and delicious, everyone will ask for the recipe of this incredible mousse cake! 

 



INGREDIENTS:

200g (2 cups) dark chocolate, chopped;

30g (4 tbsp) cocoa powder;

60ml (¼ cup) water;

500ml (2 cups) milk;

400ml (1 ¾ cups) cream;

60g (5 tbsp) sugar;

100g (6 tbsp) condensed milk;

16g (5 tsp) gelatin;

80ml (⅓ cup) water.





METHOD:

Whisk cocoa powder with 60 ml of water until smooth paste forms.

Warm-up milk over medium heat and dissolve cocoa paste in it.

Bloom gelatin in 80 ml of warm water.

Add gelatin, sugar, cream, condensed milk, and chopped chocolate into the cocoa milk.

Place a bowl of the mixture on top of the ice and whisk until it cools down slightly.

Pour the mixture into a parchment-lined pan and let sit overnight.

Dust with cocoa powder before slicing.

II. Pudding squares

Pudding squares: you'll love this creamy and inviting dessert!

This dessert is super easy and delicious!

 

INGREDIENTS:

300g (1 ¾ cups) dark chocolate chopped

600ml (2 ½ cups) milk

50g (¼ cup) sugar

10g (2 tbsp) agar agar powder

Dark cocoa powder for decor



 

METHOD

Place a medium pot over medium-low heat. When the milk starts to warm up, lower the heat as much as possible and whisk in sugar and agar powder.

Add chopped chocolate and melt it slowly, making sure to stir the pudding mixture all the way through.

When the chocolate has melted, pour it into a square pan and let sit in the fridge until fully set (around 4-6 hours).

Transfer pudding onto pieces of parchment and dust with cocoa powder. Then carefully move onto a serving dish.
