CABBAGE AND GRAPE LEAVES DOLMA MADE WITH GROUND TURKEY

INGREDIENTS

2 pounds of organic ground turkey

2 grated fresh tomatoe

1 medium grated onion

4 cloves minced garlic

1 bunch scallions chopped

1 bunch cilantro chopped

1 bunch dill chopped

1 bunch parsley chopped

1 small espresso coffee cup #2 bulgur

1 small espresso coffee cup persian rice

1 small espresso coffee cup short grain rice 

1 small squeezed lemon juice

2 tablespoon olive oil

5 tablespoon tomatoe paste 

1 tablespoon pepper paste 

3 teaspoons salt

1 teaspoon black pepper

1 teaspoon tumeric

1 teaspoon red alleppo pepper 

1/2 teaspoon dry mint

1/4 teaspoon allspice 




METODE:

Mix all together and roll it into the grape leaves and the prepared cabbage leaves and cover with more leaves to keep it shiny. 


Lastly, prepare 3 cups water with 1 tablespoons tomatoe paste, 2 teaspoons olive oil, 1/2 teaspoon salt and black pepper and 1/2 squeezed lemon juice, pour over dolma, cover with a plate and some kind of weight and cook on high till water boils, thereafter lower heat and cook for another 1 hour- 1 hour and 15 min. Last 15 minutes cook covered.
