I am not Irish but let me see if I have this right a chipper is basically something with chips. it has other things too...But I started of with these cheese fries & chicken bites...

It was very tricky because my presentation interfered with the method of cooking. Anyways here are the recipes.

 

Chips

Get some potatoes cut them up into chips and while they still hot add cheese on top so it melts and it's all stringy when you eat them.

They have to be super hot for the cheese to melt.

 

Chicken Dippers

2 chicken breast cut into cubes

1/2 paprika, hot chilli powder, cayenne, cajun spice

Salt & pepper

1/4 tsp Thyme & parsely

In another bowl, 1 egg beaten & mixed with hot sauce (optional)

In a separate 1 cup of flour combined with thyme, parsely, s & p, paprika

 



Method:

1- Season chicken cubes with, s&p, thyme, parsley, paprika, cayenne & chilli powder..

2- Cover chicken with flour, dip in egg, dip in flour again & set aside on a wire rack.

3- Heat cooking oil, then fry the chicken cubes in the oil for 5minutes.

4- Place in an oven proof tray & finish off in the oven...Done

 

Mayo dip

2 tbs of mayo

1 tsp lemon juice

1 garlic clove finely minced

--Mix it all up in a bowl and enjoy--
